Let’s start with Chef Mike! 👨🍳 The man, the myth, the baking genius. One day, he took a bite of a shop-bought ginger cake and immediately knew… it wasn’t good enough!
Why? Because gluten-free cakes can tend to be dry! Like, sandpaper-dry. And ginger cake? It should NEVER be dry. It should be sticky, rich, and so moist you need to wipe your hands after every bite!! 😄
So Mike got to work. Golden syrup, black treacle, ginger wine, and ALL the warming spices, testing batch after batch until he nailed the perfect chewy, sticky, melt-in-your-mouth texture.
And the secret weapon? Hunks of real stem ginger!! 🍯 Because a real ginger cake doesn’t just have a bit of spice - it’s got bold, fiery ginger pieces that make your taste buds sit up and pay attention.

Where did Jamaican Ginger Cake actually come from??
Well, this is where things get interesting, and where we need to talk about the colonial history behind it...
🛳️ Rewind to the 1600s. European traders were obsessed with sugar, molasses, and spices - and they took ginger from Asia and brought it over to the Caribbean. Jamaica, with its perfect climate, became a major producer.
But here’s the dark side: this trade was built on exploitation and slavery. Colonial powers made fortunes from Jamaican-grown ginger and molasses, while the real culinary magic was happening in the hands of local cooks.
Jamaicans took these ingredients and made them their own; ginger in drinks, sauces, and eventually, cakes! What started as a colonial trade product became a beloved staple in Jamaican baking!!
Then? It made its way to Britain. Ginger cakes became a Victorian favourite, and by the 20th century, it was a UK household classic, the age-old McVitie's cake your nan always had in the cupboard, ready to be drowned in custard! 🍮
And now? We’ve brought that iconic flavour back; but gluten-free, and better than ever!
