🍓Classic Victoria Sponge 🍓

The ultimate Mother’s Day cake - simple, elegant, and totally delicious 😋

You’ll Need:

  • 250g Baked to Taste GF Cake Mix
  • 200g sugar
  • 200g butter (or dairy-free spread)
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 tbsp milk (or dairy-free alt)
  • Strawberry jam & whipped cream for filling

How to Make It:

1️⃣ Preheat oven to 180°C and grease two cake tins.
2️⃣ Beat together butter and sugar until fluffy.
3️⃣ Add eggs, vanilla, and milk, then slowly mix in the GF Cake Mix.
4️⃣ Split between tins and bake for 20–25 mins (until golden and springy!).
5️⃣ Cool, then slather with jam and cream before sandwiching together.
6️⃣ Dust with icing sugar & serve up a slice of nostalgia!

🍫 Ultimate Chocolate Fudge Cake 🍫

For the chocoholic mums out there - this one’s for you!

You’ll Need:

  • 250g of our GF Cake Mix
  • 200g sugar
  • 200g butter (or dairy-free spread)
  • 4 eggs
  • 100ml milk (or dairy-free alt)
  • 50g cocoa powder
  • 100g melted dark chocolate

How to Make It:

1️⃣ Preheat oven to 180°C and grease two cake tins.
2️⃣ Cream butter and sugar together, then add eggs, milk, and melted chocolate.
3️⃣ Stir in GF Cake Mix and cocoa powder until smooth.
4️⃣ Split into tins and bake for 20–25 mins.
5️⃣ Cool, then smother in chocolate ganache or buttercream (go on, be extra).

🍋 Zesty Lemon Drizzle Cake 🍋 (Dairy Free!)

A fresh, tangy cake that’s super easy and completely dairy-free!

You’ll Need:

  • 250g Baked to Taste GF Cake Mix
  • 200g caster sugar
  • 100ml vegetable oil
  • 2 eggs
  • Zest & juice of 2 lemons
  • 100ml dairy-free milk
  • 100g icing sugar (for drizzle)

How to Make It:

1️⃣ Preheat oven to 180°C and grease a loaf tin.
2️⃣ Whisk together oil, sugar, eggs, lemon zest, and juice.
3️⃣ Stir in the GF Cake Mix and dairy-free milk until smooth.
4️⃣ Pour into tin and bake for 40–45 mins (until golden).
5️⃣ Mix icing sugar with lemon juice for a tangy drizzle and pour over the warm cake.
6️⃣ Try not to eat it all at once. (We failed at this one!)
